As a huge fan of the CW show, Riverdale, I was excited to discover Madelaine Petsch, who plays Cheryl Blossom, has been vegan her whole life! I came across an article from Women's Health where Madelaine was talking specifics about her diet. A typical dinner might be "Broccoli “steak” (two heads of broccoli sliced, spiced, and roasted) with vegan cheddar "cheese" with a side of brown rice and black beans." This sounded delicious, so I decided to try it out for myself. Below is the recipe I used to create this satisfying dish!
Ingredients:
1 head of organic broccoli
Coconut oil
Salt and pepper to taste
Daiya vegan cheese (any variety)
Cumin, Chili powder, onion powder, and garlic powder
Rice of your choice (preferably organic)
Organic black beans
Directions:
1. Preheat the oven to 400 degrees.
2. Rinse the broccoli and slice into thin "steaks".
3. Place the slices on a cookie sheet with parchment paper.
4. Brush with enough coconut oil to cover each piece evenly.
5. Season with salt, pepper, and any other spices you like.
6. Bake for 30 minutes.
7. Add as much Daiya vegan cheese as you'd like and put back in the oven for about 5 minutes or as long as it takes to melt the cheese.
8. Cook the rice according to package instructions while the broccoli is baking.
9. Drain and rinse the beans before adding them to the rice and season with salt, pepper, cumin, chili powder, garlic powder, and onion powder.
10. Serve and enjoy!
Another option would be to serve the broccoli with organic tempeh. Simply slice the tempeh thinly and fry in coconut oil on either side for 5 minutes. Add some tamari for extra flavor! This meal is delicious, easy to make, and filling!
